Chef Michael DeBoer has more than 20 years of experience as a restaurant and banquet professional. He graduated from the Culinary Institute of America in 1994 and has lead kitchens in high-end restaurants in New York City, Denver and Boulder, including stints at Le La Coupole Café, The Red Lion, The Greenbriar and The Dushanbe Teahouse. Most recently, he served as the banquet and sous chef for the Chautauqua Dining Hall, where he orchestrated everything from afternoon teas to weddings for 200 guests.
Our menu offers something for everyone. As a nod to French street food, we serve waffle fries (pommes gaufrettes). Those looking for classical French fare will appreciate our offerings, including our signature duck confit (confit de canard), served with Lyonnaise potatoes and a tarragon-grapefruit cabbage salad.
The French Twist Food Truck is also able to accommodate most dietary requirements, including vegetarian and common allergies like gluten and dairy. His wife and stepson have food allergies so he knows how important it is to keep you and your family safe.
Our team and truck will travel to anywhere within a 60-mile radius of Boulder, Colorado, excluding the mountains. (Mileage fees apply.)

Food Truck Events
We’d like to add a special note about Food Truck Events, which are becoming regular draws for communities and neighborhood. For example, Prospects Eats is one of the primary summer events for that community and has helped make it nationally known. If you are planning a regular Food Truck Event for your neighborhood or community, whether weekly or monthly, we are here to help. We have guidelines for organizing an event that we are happy to share with you and can put you in touch with our fellow food trucks to create a large draw. We can help with the actual organizing and publicity.
Regular Lunch & Dinner Service & Additions
We have a regular schedule of lunch services, Monday through Friday, in Boulder County business parks. In the evenings, we can be found at brew pubs and wine bars throughout Boulder county, adding to their ambiance and draw. In addition to serving food off The French Food Truck, we offer boxed breakfasts and lunches and delivery within Boulder. Please check back for more details.
Whether your event is going to be informal or elegant, we have a service to fit your vision.
With Truck a La Carte Service, your guests have the leisure of lining up to order their food from our regular menu, during a specific time frame. This allows them to relax and eat when they want.
If you are seeking a more elegant Plated Sit-Down Service, we design a menu to your liking and serve it up to 150 guests at your venue. Extra charges are applicable.
